Raw Taco Rice

Advance apologies for sub-par food porn today, but the thing is this:

As per my habit these days, I totally dropped major coin at the farmer's market Monday, only to eat dinners in restaurants for the next three nights. Result? Serious produce overload in need of using. So after my macro-tastic dinner at Souen last night, I came home and made the dinner I'd planned anyway, packing it into individual containers for lunches this week.

I had tons more purple and white cauliflower to use from last week's Raw Rainbow Rice, so I rolled with the rice theme, but came up with a new combo to make a fiesta of a recipe. Ole!

Raw-co Taco Rice
  • 1/2 head each purple and white cauliflower (or 1 head of whatever color)
  • 1 large red bell pepper
  • big handful cherry/grape tomatoes
  • 1 ear of corn, kernels cut from the cob
  • handful fresh cilantro (more or less, depending how much you like)
Run all veggies except corn through the food processor until everything is diced. Combine in a large bowl and toss together with the corn. Dress with salsa or a zingy dressing like Gena's Creamy Avocado Cumin dressing.

Serves 2-4

I had a major surplus of romaine, so I included some in my lunch bowls to add more volume (as if I needed it with half this recipe as one serving), but it only diluted the flavors of the "rice" dish, so when I do this again in the future, I'll probably just eat it as is.

I daresay this was almost more delicious than my Asian-flavored Raw Rainbow Rice! The veggies/herbs were way more flavorful in their own right, even before the dressing, which I dearly love as well. I'm telling you, Gena puts the Gen in GENIUS!

Running raw veggies through the food processor is stoopid-easy, so I highly recommend whomping up a batch of whatever and tossing with whatever dressing as your contribution to the Labor Day shenaniganery you may be attending this weekend! It looks fancy, which means so do you, but don't worry, your shortcut secret's safe with me. That's how I roll 24/7!

I love how you roll! Such pretty rice and yeah, would make a great Labor Day party food. At least there'd be something I could eat if I was lucky enough to attend a party where the smell of burning meat and greasy chips wasnt aplenty. Keep up the creativity!

So you are going to die when you hear this: Chloe set my food processor ON FIRE last night. Do not ask me how. But she did. Thank god I am getting a new one. And my apartment did not burn too.
