Hmm, No-Bake Banana Bread looks an awful lot like a breakfast cookie. Ok, maybe it is. BUT this combination of ingredients totally did taste like banana bread! Behold:
- 1/4 cup rolled oats
- 1/4 cup wheat bran
- 1/2 packet (15g) Jay Robb vanilla whey protein powder
- shakes of cinnamon, nutmeg, cloves
- 1/4 avocado
- 1/2 frozen banana, melted in the microwave for 30 seconds
- 1 tbsp Better'n Peanut Butter
Just combine all ingredients well, spread onto a plate to make a cookie about 1/2 inch thick and refrigerate overnight! This recipe makes a very thick cookie dough, which is how I prefer it (as opposed to goopy), so add a splash of milk if you think it requires thinning.
I've read plenty about Better'n Peanut Butter on other blogs, but I just picked it up for the first time at Trader Joe's this weekend, figuring it was worth a go. It's fairly drastically lower in fat and calories than regular peanut butter (by 85% and 40%, respectively), which is accomplished by replacing some of the peanut bulk with stuff like tapioca and dehydrated cane sugar. Due to those additions and a taste that is a far cry from traditional PB, I don't know if I'd call it Better'n PB, per se, but if you just think of it as a sweet peanut-flavored spread...sure! It is a much better sweetened peanut-ish blobule than I could ever scoop out of my regular PB jar, which contains only one stupid ingredient: wait for it...peanuts.
More to the point, it made my breakfastcookieImeanbananabread a bit more desserty. And maybe just now I stuffed some Better'n PB into a date and housed it as a before-midnight snack. And maybe I have a new addiction...
