Fuggedaboutit Friday: Kashexplosion

At this point, I can't pretend to know the difference between allergies and a plain old cold, but whatever it is I have is HORRENDOUS and has totally exploded in the last 24 hours. No, really - there is a rainbow of goo coming out my nose at all-too-frequent intervals. My voice is also alternating between just husky and totally pube-ing out like a 12-year-old boy. On the bright side, depending on when you catch me, I might sound extra sexy. Or I might be honking into my snot rags. Interact at your own risk.

More importantly, however, I'm officially on vacation!!! At o'dark-thirty Sunday morning, the roomie and I are catching the first flight outta here to spend a week at Disney World (!), so the next time you hear from me will likely be from Florida, or at least en route. My posts won't be pretty, since they'll come from my phone, but I'm sure you'll forgive me if I promise you pictures of Mickey Mouse. Or Mickey Mouse ice cream pops. Whichever comes first.

In light of said impending vacation, I have completely avoided grocery shopping this week, and what resulted today was a completely Kashi diet. I swear it was an accident! I wouldn't repeat it again on purpose, but we all know by now that I always have a number of Kashi products on hand, so I worked with what I had, in the absence of anything fresh at all.

Wait, I lied - there's an apple in this picture:

Can't trust me as far as you could throw me. But in the bowl, we have Kashi's Honey Cinnamon warm cereal, which I bulked up with 1/4 cup wheat bran and 2 tbsp of PB2. The apple slices are extra good when dunked in Kashi oats. :)

Lunch was one of Kashi's new frozen entrees, the Tuscan Veggie Bake. I was excited to read on the package that it contained squash, roasted eggplant, onion and sweet potato between what is effectively lasagne noodles (made of Kashi grains, of course) and covered in a spicy tomato sauce.

The excitement didn't make it to my mouth, though. Now, I would consider myself an eggplant connoisseur, and the fact that the eggplant bits in this dish were totally fleshy and chewy earns an instant thumbs-down from me, and the rest of the dish wasn't good enough to save it. Don't get me wrong - I ate it - but I wasn't happy about it! You would have done the same, given the choice between this and a jar of pickles for lunch.

By 3pm I admitted defeat and went home, sadly not feeling well enough to jump for joy at the commencement of vacation time, but don't worry, there was a party in my brain.

There was a Gingerade Kombucha somewhere in there among doing laundry and other pre-departure chores, but it was camera-shy and hid in my belly. It may be my new favorite Kombucha flavor though - very similar to ginger beer, if you're into that kind of thing. If not, go try some and then you will be.

By now, I assume you can guess what was for dinner. But do you know which one?

Give up? I had the Roasted Vegetable Kashi Pizza for dinner, and it was glorious, as usual. Now that I have tried all of the pizzas, I would say this one ties with the Mexicali Black Bean Pizza for my favorite.

Jeepers, I just read everything I've written so far, and I have to wonder why Kashi does not pay me. Even the eggplant criticism was constructive!

Well anyway, I'm off to carry on with things like sleeping really fast, decongesting my schnozz and packing. Simultaneously. I won't be able to do much blog-reading during the next week, so please excuse any lack of commenting, but I'll be comin' atcha via Fancy Phone (aka G1) from the Happiest Place on Earth (...most likely as I stand in line for hours on end). I, for one, think that's the bee's knees.

(Gena is giving away a spiralizer! Don't enter, I want it.)
