Such is Mango Curry

Evenin' all, and a late one it shall be for me. I'm wicked stressed at the moment - no biggie, but it involves a dearly departed cell phone and no alternative means of telephoning, among other issues. It's a problem. I'm dealing with it. Please excuse lack of further pith and wit; I'm having to compromise and simply post my dinner recipe (as opposed to no post at all), which was adapted from this recipe.

In homage to one of the greatest Chris Kattan SNL characters, I call this dinner...

Such is Mango Curry

The characters:

  • 2 cups broth (I used low-sodium chicken broth)
  • 2 cups unsweetened SO Delicious coconut milk
  • 1 brick extra firm tofu
  • 20 oz butternut squash cubes
  • 250g baby carrots
  • 1 large red bell pepper
  • 1 cup frozen mango cubes
  • 2 tbsp curry powder
  • 1/2 tsp each ginger, coriander, salt
  • 1 tsp cumin
  • 1 stalk lemongrass (optional)

The sketch:

  1. Cut tofu and veggies into cubes
  2. Mix broth, coconut milk and spices in a pot
  3. Add peppers, lemongrass and tofu
  4. Cook over medium heat until liquid comes to a boil
  5. Add squash and carrots
  6. Cover and cook until veggies are tender (I let mine go for about an hour, but that's because I was running around like a headless chicken - it doesn't take quite that long to be done enough to eat)
  7. Add mango about 5 minutes before serving; sprinkle with cilantro and/or peanuts, if desired

This yielded 4 generous 2-cup-ish servings for me, but you could divide that further and serve over rice for a more complete main. Again, I'm a little frazzled, but it came out well in spite of my various distractions tonight.
