Pancakes of Happiness and Sunshine

This weekend's pancakes turned out SO much better than last week's! FINALLY! I really like this recipe - there's a lot of nutritional bang for your buck (24g protein, holla), and a single serving yielded 5 pancakes! Talk about volume. My pancakes were probably about 4-5 inches in diameter.

My inspiration came from here via Kath and Meghann, and then I made my own modifications based on what I had at hand and a little laziness thrown in for good measure. I didn't feel like doing the first step of putting all the batter ingredients in the blender, so my batter was composed of the following:
  • 1/3 cup oat bran
  • 1/2 cup lowfat cottage cheese (no salt added)
  • 1/4 cup liquid egg whites
  • 1/2 frozen banana, thawed
  • cinnamon

I just stirred it all together and dropped it into the skillets (I did 2 skillets at once because I was impatient) by the quarter-cupful.

For the topping, I mushed together 1/2 tbsp of dark chocolate PB with the remaining half banana.


Gotta run - it's too fabulous outside to be in front of the computer. :)

what great looking pancakes! i never would have thought to use oat bran! i've only used oats!

As soon as dairy free month is over, I'm trying this recipe. I've something similar in the past, but never with banana - sounds like the perfect addition. Thanks Diana as you know I love me some pancakes!
