Apple Aneurysm Baked Oatmeal

Sarah, you are officially my oatmeal hero right now.

My breakfast this morning was fairly epic, and since the parentals are still in vacay mode and taking forever to pick me up to go to CT for the weekend, I think I'll share with you.

I knew that Sarah's baked oatmeal needed to be in my tummy ever since reading one of her posts yesterday, so last night I went ahead and pulled the trigger. Following her instructions (mostly), I mixed together 1/4 cup steel cut oats, 2 tbsp water, 2 tbsp vanilla soymilk and 2 tbsp liquid egg whites along with a small chopped gala apple in a small bowl and managed to shove it in the refrigerator amidst the towers of hummus. For spices, I went with her suggestion of cinnamon, cardamom, ginger, cloves and nutmeg.

After some Hip Hop Abs Total Body Burn this morning (always funny, tee-hee...), I turned on the oven to 375* and hopped in the shower while it preheated. After I was dressed, I took the oats out of the fridge, stirred and put them in a small casserole dish sprayed with cooking spray. They baked (covered) for 15 minutes at 375, at which point I checked on them, and finding the apples still crunchy, I lowered the heat to 350 and baked for another 15 minutes. I only tinkered with Sarah's baking instructions because a) I had added egg whites to the mix and b) my baking apparatus was far wider than hers, making the oat mixture quite shallow.

It came out well, if slightly overdone (always ok with me, though). For toppings, I first drizzled 1 tbsp of TJ's raw crunchy almond butter on top. I also mixed 1/4 cup cottage cheese with 2 tbsp unsweetened applesauce and cinnamon and poured that on as well. And for extra flair, I had to add some Newman's Organics goodies to the tune of a crumbled Hermit cookie and a dried apple ring. Let me tell ya, the molasses flavor of the Hermits was workin' it. I would guess that they put crack in those cookies, but I don't think crack is organic.

That Sarah is brilliant when it comes to her oatmeal concoctions. Did you see her last breakfast cookie? Wow, the girl is creative, but then so are you!

Love the Newman's Hermit addition. Still so jealous of your array of Newman's goodies.
