Wackadoo Snackadoo

The eating schedule is a lil off-whack today, but whatevs - more room for experimentation! For a late-day snack, I wanted to try this idea I read about at Heather Eats Almond Butter, which she adapted from Vegan Strong, which I simplified yet further. So this idea is twice removed (at least), but it is so delish that I had to report to the ranks.

The basic premise would be "peanut butter and jelly quinoa," but I don't have jelly in the house so I used TJ's pumpkin butter. To do this, you just cook the quinoa, stir in 1 tbsp of jelly/jam/preserves/sweetgoo and top with a whollop of PB! (A whollop would be more than a dollop, in case you missed that. BAM!) It makes for an extremely hearty snack, but it's perfect for breakfast! Great for good carbs, good fat and decent protein. Heretofore I had thought of quinoa only in a savory context, but I'm going to have to let it bust the breakfast barrier too! Sure to stick to yer ribs, mate.

Oh, I bet it was so good with pumpkin butter. Isn't this a great dish! I'm so glad you're spreading the love of the PB&J quinoa! Have a good Sunday.
