If You Like It Then You Shoulda Puttanesca'd It

Since I was in Boston all weekend, I didn't have a chance to grocery shop. Therefore, I was limited to what I had in the house for dinner tonight. Believe it or not, sometimes these are my favorite dinners, when I'm forced to make something tasty and balanced out of what I've got. I was inspired by an issue of Shape magazine that I was flipping through this morning. They had a recipe for easy pasta puttanesca. Not easy enough, says I! And furthermore, why serve it over pasta when you have wild rice?! This is what I simmered together to create two servings of...

Pooty Nest o' Tang
  • 1 cup jarred marinara sauce of your choice
  • 100g chopped spinach
  • 1 can chunk light tuna (packed in water), drained and broken up
  • 2 cloves garlic, minced
  • 6 kalamata olives, minced
  • 2 tsp capers, drained and minced
  • 1/4 tsp dried red pepper flakes and fresh ground pepper (aforementioned 'tang')

I topped my bowl off with a tablespoon of parmesan cheese and one crumbled strip of facon to carbonate it (carbonara-ate = carbonate). That's about as authentic-Italian as putting it over wild rice, but whatevs, it tasted frickin' bomber.

The dish looks really interesting. I think it;d be better over rice than pasta anyway!
