Caul it a Day

Tired + lots of stuff to do before bedtime = lame-o post for dinner, but I couldn't bypass posting my plate entirely because it was WAY too delicious to go un-publicized.

The short story is that I wanted to make a Cauliflower Bake a la What I Ate Yesterday, but Fettuccine Hungry Girlfredo also sounded good. Noticing that they had similar ingredients, I decided to prepare the Cauliflower Bake AND serve it over Tofu Shirataki fettuccine. It shall be called...Cauliflower Al-bake-doh. (You must have noticed by now that my favorite part of food blogging is coming up with wacky-quacky names for things...some better than others...)

Hot pot of coffee!!! This is about the best damn thing I've made in a while. And I shall take no credit whatsoever, except for the serving suggestion. It was quite lovely in all it's cheesey, garlicky goodness, along with a side of roasted kale. It was my first time doing that as well, and it was a fun surprise - just like veggie chips! I highly recommend giving this bake a try. I way overdid the breadcrumb topping (it was breadcrumbling e-ver-y-where), but hey, I guess that's the best part anyway. :)
