Fakin' Eggs 'n' Cheese

Deskfast experiment!

Despite my love of sweet breakfasts, I do feel the need to change it up at least once a week and go savory, which is usually my chance to do an egg breakfast of some sort. And yet, it is so hard to give up the cereal! Well, why not do both? ...says my Inner Food Creativity Squirrel (it's a squirrel because 'squirrelly' connotes mischief and crazy thoughts, and that is what characterizes this voice in my head). WACKY!

It's actually not SO weird, when we take into account the Southern breakfast traditions of biscuits and gravy or cheesey grits. That's the premise I built upon when I customized my deskfast for this morning. Ingredients as follows:

  • 1/3 cup rolled oats
  • 1/3 cup each skim milk and water
  • 1/4 cup liquid egg whites
  • 1 tbsp ground flax seed
  • pinch salt 'n' pepa (SHOOP!)
  • 1 oz reduced fat cheddar cheese, grated
  • 1 strip facon

I used the overnight oats technique of combining the oats and flax with the liquid ingredients last night and refrigerating. I brought the mixture to the office this morning along with the grated cheese and facon strip on the side.

First, I microwaved the facon for a minute to get it crispy. Then I dumped the oats mixture in my bowl and microwaved for a minute, stirred, then heated for an additional 1.5 minutes. I then stirred in the cheese till melted and well distributed, and crumbled the facon on top.

Now that's some sexxeh Suthun' hospitaliteh. With 27 grams of protein tuh boot. I couldn't even finish my grapes! Woof.

Definitely a nice change from your estandard cinnamon/peanut butter/whateversweetgunk oatmeal or cold cereal. Kinda reminded me of a cross between aforementioned Southern style gravy and cheesey grits (minus any grit whatsoever).

Also, along with the promised Boston recap, I promise to share last night's dinner with you sometime soon, as it is definitely blog-worthy. In fact, I will not be the first to do so; this is well-covered blog territory, at least in NYC. Nonetheless!

Looks good! I have been wanting to try egg whites in my oats! I have to do it one weekend! Can't wait to hear about your dinner!
