Air Cookie

Happy Friday! I am feelin' good because there is a rocktastic breakfast coursing through my veins. Let me here point out that the breakfast cookie defies gravity. I decided to hold it up and take a pic today to demonstrate how physics do not apply to this breakfast. The cell phone pic is wonk, but it does the job.

I know this is the second day in a row for a cookie breakfast, but I'm a total breakfast cookie monster these days and last night I had an idea for a new mix-in combo that I desperately needed to test out. The result: the richandcreamiest, mosttastiest, healthiest breakfast cookie yet!

In the mush:

  • 1/3 cup rolled oats
  • 1/2 scoop vanilla protein powder (I used Kashi)
  • 1/4 cup pumpkin
  • 1/4 of an avocado (!)
  • 1 tsp pumpkin butter for sweetness (honey/agave/other sweetener would work well too)
  • 1/2 tbsp crunchy PB
  • cinnamon
  • 1 tsp each coconut and carob chips for topping

Next time I would add more cinnamon, and maybe some nutmeg and cloves too to make it extra flavorful, but otherwise this was smooth, creamy perfection. That was the reason behind the toppings, actually, to give it some texture. The carob was tasty, but unneccessary. The coconut, however, was WORKIN' it. Definitely a complementary flavor.

If you decide to try this combo, I would just recommend combining the "wet" ingredients first, as the avocado requires some mushing effort, best accomplished with a fork, IMHO. You'll want to get all the goo pretty well evenly mixed before adding the oats and protein powder. Oh, and try not to drop your canister of oats on the floor. It will spill.

...moment of silence to mourn loss of approximately 1/2 cup of oats...

Aaand I'm done. Time to do things.
