Portobello Road, Portobello Road...

Feeling the need for some serious protein, I did a bit of an experiment tonight. I had bought the ingredients to make a tuna melt, but instead of broiling it on top of bread, I thought I would try substituting a portobello mushroom cap. Success! I simply sprayed the cap with a little cooking spray and roasted it on its own at 450 degrees for 6 minutes or so before topping it with the tuna mixture, local heirloom tomato slices, reduced fat cheddar and some spices. Back under the broiler for 5 minutes, and voila!

I used a recipe from Eating Well a while back to teach myself how to make a tuna melt in the first place, but have made my own modifications. I don't care for mayonnaise, so I substituted Greek yogurt, nor do I care much for fresh parsley, so I sprinkled in my own dried herbs. I also threw in a dash of Adobo in lieu of shallots, but that's because I'm lazy. Alongside some steamed green beans with almonds, this was total comfort food made healthy.
As I was brewing my chai after dinner, I remembered that I had a true treat in my fridge: leftover apple compote from Sunday brunch at Quantum Leap! I popped that deliciousness in the microwave STAT and was soon comatose with a happy belly.

Now, whenever I see portobello mushrooms, the same thing inevitably happens: I get that Portobello Road song from Bedknobs and Broomsticks in my head. I was totally humming it while I cooked dinner, so I wanted to stick the YouTube video of it in here, but I am embedding-challenged and I can't make it work.
