C is for Cookie

That's good enough for me. :)

Tried a new mix-in for the Fitnessista's breakfast cookie, and it so rocked my world. Contents:

  • 1/3 cup rolled oats
  • 1 tbsp raw (chunky!) almond butter
  • 1/2 scoop Kashi Go Lean protein powder
  • 1/4 cup applesauce
  • 1 tbsp golden raisins
  • dash of cinnamon (a hearty dash, because I loves me the sminnamon)
  • dash of nutmeg (really just a dash - easy to overdo)

Just mix, spread and refrigerate overnight! I love it!!! I like my breakfast cookies thick and chewy, like a real cookie, so I left out the usual 1-2 tbsp milk I usually also add. Heather of Heather Eats Almond Butter also has great ideas for the breakfast cookie (it sure is making its internet rounds!), like avocado (!). If it does end up too goopy in the morning, I agree with Heather's suggestion of popping it in the freezer for just a little while before eating - I have done this myself.

Also pictured is my cup of tea with the silicone music note 'teabag,' as promised. [Insert your groans and eye-rolling.] It is a super cute way to brew the faaaaaaabulous loose green tea (said to retain more of its health benefits than bagged tea does) from Japan that I am slowly working my way through. Thank you, Tokyo-dwelling parents, for keeping me eyeball-deep in quality tea.

Like apple pie AND cookies for breakfast! Nothin' wrong with a little extra dessert in my life...

Applesauce in the b'fast cookie? - I'll have to remember that one. I also noticed that Gina spread jam on her more recent ones before refrigerating. Such a versatile breakfast treat!
