As if I Needed More Fiber...

This is one of my most favoritest breakfast concoctions of random-stuff-I-almostalways-have-on-hand. It's warm and squishy, but a nice change from regular oatmeal or cereal. All you need is a microwave.

The Freezer Fairies were kind enough to provide me with some of TJ's Apple Cranberry Bran Muffins that I bought a while back. These are great because they are amazingly high in good stuff like fiber and protein while staying low in fat and calories. Not for bran-haters, however.

While I defrosted two muffins in the microwaved, I combined in a separate bowl 1/4 cup each of applesauce and cottage cheese. I've been buying the no-salt-added lowfat cottage cheese these days because when I discovered it in the dairy case for the first time, I was like, "huh?" When I did a nutrition facts comparison of that vs. normal lowfat cottage cheese, I was shocked to find that a serving of the normal kind contains something crazy like 20% of your daily sodium in 1/2 cup! WTF?! Normal cottage cheese, you are hereby banned from my refrigerator. There is a taste difference, but after a while of eating no-salt-added, you forget what the normal kind tastes like. As for the applesauce, that's always unsweetened and organic for me, for obvious reasons. I eat a lot of apples, and who needs the extra sugar? Applesauce should taste like apples. Duh.

I digress. I sprinkled some cinnamon and nutmeg on the cottage cheese-applesauce combination and stirred it together, then popped it in the microwave for a minute. Once both that and the muffins were warm enough, I poured the apple-cheese sauce over the muffins and topped with walnuts and flax seeds. Deliciousness coma!

To rouse me from my delishium, I made some coffee to go with breakfast, using Heather of Hangry Pants's idea of sprinkling cinnamon right into the grounds before brewing. Such a fun change from normal coffee! This is an idea worth repeating (and to get creative with...stay tuned).

Well, now that it's lunch time I guess I had better do something with my Saturday. Hope it's a relaxing one for you! It should be noted that I lost this entire post the first time I wrote it and just rewrote the whoooole thing. BOO! At least I hadn't realized it was lost before enjoying a nice long phone convo with Katherine. She saved me from complete and utter blog despair! So good to catch up with old friends. :)
